Menu Plan Monday ~ February 22

I just realized as I came to post my menus for this week that I don't have links for almost everything I'm making. And I still haven't posted my recipe for Chicken Pot Pie. I tried to find a similar recipe but without success. So I'll have to try to get my recipe posted later. It's not too hard...the secret ingredients are thyme and pillsbury ready to bake crusts!

Monday ~ Pancakes, Sausage, Scrambled Eggs (these are the pancakes I made a few weeks ago and froze)

Tuesday ~ Grilled Tri-Tip, Broiler Potatoes & Corn (This will be my first attempt at indirect grilling...prayers please!)

Wednesday ~ Mexican Layered Casserole w/ tortillas

Thursday ~ Fish Tacos w/ Black Beans

Friday ~ Easy Chicken Manicotti

Saturday ~ Focus on the Family Marriage Conference & Winter Jam at Ford Center (ssshhhhh, it's a secret) - NO COOKING!!!!!

Sunday ~ Chicken Pot Pie

Menu Plan Monday ~ February 15th

Monday...here we are again. I know many people dread Mondays but I rather like them. Sunday is usually relaxing and filled with "the bread of life" and then Monday we get back to routine. And I love routine. And of course the deals! You all know me well enough to know I can't wait to get out shopping on Monday and do the deals.

This week I found 3lb bags of chicken breast on sale at Crest foods for $3.99 so I bought three. This will go along way toward my grocery budget AND make for an easy week of cooking. I also have some zucchini, yellow squash and mushrooms I need to use up so I took that into consideration. And last week I found a package of Hormel Always Tender Pork Baby Back Ribs for only $1.49/lb at Homeland. Of course I used the $1.00/1 any Hormel Always Tender product to save $2.00 off the package and we'll be having those this week. Hubby loves ribs! Then again, is there a man who doesn't?

Monday ~ Chicken Chili w/ cornbread (I'm cheating...Mondays are busy. I'm using a jar of Chili Master Chicken Chili I got at Walmart awhile back for $0.50)

Tuesday ~ Chicken Zucchini Pasta and green salad w/ lots of goodies

Wednesday ~ Sausage Marinara Bake w/ Rolls (I just slice smoked sausage, brown in a skillet and then mix w/ cooked pasta, red pasta sauce and one cup of italian cheese, place in casserole dish, cover and heat in a 350 oven. Then top with more cheese, melt it and serve)

Thursday ~ Chicken Soft Tacos

Friday ~ Hubby has a retreat so it's just us girls! We're gonna eat whatever we want!

Saturday ~ Pork Ribs w/ homemade Baked Beans and rolls

Sunday ~ Chicken & Veggie Saute over rice (I just saute chicken, mushroom and carrots with whatever fresh veggies I have on hand and whatever spices and seasoning sound good and VOILA!)

Menu Plan Monday ~

Ok, it's really time for me to add some new recipes to my tried and true list. So this week I'm incorporating two recipes I have never tried before. I'm excited and think my family will really like them. For now I'm going to link you to the recipe online as I found it and then I'll add it to the Simple Saving recipe list once I've tried and tweaked it.

Monday ~ Homemade Chicken Noodle Soup w/ crusty bread (perfect day for it too...it's snowing...monster flakes!!)

Tuesday ~ Impossibly Easy Southwestern Pie (I'm adding chicken)

Wednesday ~ Chuckwagon Chili Mac

Thursday ~ Fajitas

Friday ~ Pasta Rollups w/ meat sauce (My husband cannot eat a meal without meat...or at least commenting on the lack of meat, so I'm making the pasta rollups as the recipe calls for but then adding ground beef to the sauce that goes over the top.)

Saturday ~ Ham & Potato Bake w/ rolls (I've given you a link similar to the recipe I use but I use red instead of green bell peppers and add a teaspoon of dried mustard and parsley to the sauce)

Sunday ~ Hmmmm.....haven't decided...am I bad?

Menu Plan Monday ~

This was an easy meal planning week...thanks to the cooking I did over the weekend and the great deals on chicken last week and pork roast this week. I haven't had a chance to scope out some new recipes so I'm still relying on my old standbys. The thing about that is my family would eat spaghetti, chicken manicotti and tacos every night of the week if I'd let them...the problem with that? Mom gets bored!!

Monday ~ Left overs

Tuesday ~ Italian Chicken Pasta w/ bread sticks

Wednesday ~ BBQ Pork, Whole Green Beans & Baked Beans

Thursday ~ Chicken Soft Tacos

Friday ~ Lemon Chicken, Almond Rice & Salad

Saturday ~ Chicken Tortilla Bake

Sunday ~ Chili w/ corn muffins (It's the AGAPE FEAST at church which is a huge potluck dinner w/ communion, baptism and fellowship)

You can check out more menu ideas here.

Menu Plan Monday ~

Ok, I am officially in a rut. I have at least 30 tried and true recipes but hubby only likes about half of those. I want to please him but can't make only 15 meals a month. Well, I guess I could, but can we say...BORING!

So seriously, if you all have any delicious and simple recipes you whip together for your family, please share!

So for this week:

Monday ~ Tuna Mac & Cheese w/ peas

Tuesday ~ Chili w/ cornbread (no link for this but easy...ground beef, pinto beans, chili seasoning packet, tomato sauce, crockpot)

Wednesday ~ Easy Chicken Manicotti w/ green salad

Thursday ~ Sloppy Joes w/ corn

Friday ~ Turkey Loaf, Mashed Potatoes & Green Beans w/ bacon

Saturday ~ Grilled Chicken Breast & Drumsticks (kids) w/ Roasted Red Potatoes & green salad

Sunday ~ Ham & Cheese Calzones

Menu Plan Monday ~

Hubby is feeling quite spoiled after a whole week of his favorite meals and I quite enjoy hearing "mmmm...that was good" so I'm planning another week of favorite meals...and then after that, for fear of getting in a rut, I'll need to move on. Of course I'll still throw in his favorites but hey, this isn't eutopia!

On that note, I'd love to gather some new recipes. So if you have any simple ones you'd like to share, please email me. I'd love to share them with the rest of our readers as well.

Monday ~ Chicken Stew

Tuesday ~ Spaghetti w/ tossed salad

Wednesday ~ Green Chili Chicken Enchilada Casserole

Thursday ~ Poppyseed Chicken w/ pasta

Friday ~ Fajitas  & Sugar Snap Peas w/ Red Bell Pepper

Saturday ~ Mexican Layered Casserole

Sunday ~ Grilled Baby Back Ribs & Chicken w/ baked beans & whole green beans w/ bacon

Menu Plan Monday ~

Last week the kids went back to school and it was the beginning of a new year. With the new year came the need to reprioritize my life (well, the new year didn't actually bring the need...just gave me a good place to start). So with this in mind, I spent the week reorganizing, catching up and creating a weekly work schedule (which I'll share with you later) and of course all this called for a light meal plan.

But this week I am back in the swing of things and I promised hubby some of his favorite meals. So here goes:

Monday ~ Sloppy Joes w/ corn

Tuesday ~ Chicken Pot Pie

Wednesday ~ Chicken Manicotti w/ tossed salad

Thursday ~ Chicken Soft Tacos

Friday ~ Ham & Potato Casserole

Saturday ~ Grilled Beef Filets/Ribs w/ Baked Potatoes & Sweet Potatoes
*this dinner was actually scheduled for last week but hubby took me on date night to Deep Fork Grill instead. YUM!!

Sunday ~ Beef Tacos w/ refried beans & cheese

And I just realized I have only one of these recipes available to link you to...yikes! I need to get after it!

Menu Paln Monday - October 26 ~

This is another busy week but I didn't want to subject my family to another "easy" cooking week so we're jazzing things up a bit. I was very excited to find chicken breast at Crest Foods for $1.49/lb. And last week I found a bunch of 93/7 marked down to $2.37/lb, thus all the ground beef dishes.

Monday - Penne Marinara (basically regular spaghetti but without the spaghetti)

Tuesday - Chicken/Bacon/Mozzarella Calzones w/ Strawberries & Bananas & Tossed Salad (we ended up ordering pizza last week so this is not actually a repeat)

Wednesday - Shepherd's Pie w/ rolls

Thursday - Poppyseed Chicken w/pasta & rolls

Friday - Sloppy Joe Bake

Saturday - Meatloaf w/ Mashed Potatoes & Green Beans w/ bacon

Sunday - Chicken Caesar Salad w/ some kind of dessert (taking this to the Agape Feast at church)

Menu Plan Monday ~

I'm embarrassed to say it but my freezer (meat-wise) is almost bare, so I'm very excited about the meat deals at Buy for Less this week. Unfortunately, they only last through today and then tomorrow starts another sales cycle. I've pretty much planned my menu for this week and part of next (yes, I'm already planning for next week) around the Buy for Less deals and the regular low prices on ground turkey and lean ground beef I know I can get at Aldi each week.

Here's what my family is eating this week:

Monday - Pork Roast w/ potatoes & carrots
(this was actually the tale end of last week's menu since I plan Tuesday through Monday)

Tuesday - Fish Tacos w/ black beans and fresh fruit

Wednesday - Mac & Cheese w/ tuna & peas
(one dish dinner - gross, I know but my family LOVES it!)

Thursday - Easy Chicken Manicotti w/ salad

Friday - BBQ Pork Sandwiches w/ Garlic/buttered egg noodles & fresh fruit

Saturday - Grilled Pork Sirloin w/ Cob Corn & Baked Beans

Sunday - Meatloaf w/ Mashed Potatoes, Gravy & Green Beans w/ bacon

Monday - Country Chicken Casserole (one dish dinner)
