Savvy Saver Recipe ~ Mandarin Cashew Chicken ~


1 tablespoon olive oil
1 clove garlic (finely chopped)
1/4 cup onion (chopped)
2/3 cup cashews (I add more)
2 cups chicken breast (chopped into bite size pieces)
1 cup sugar snap peas
2/3 cup stir fry sauce
1 can mandarin oranges

Reserve 2 tablespoons juice from mandarin oranges and add to stir fry sauce. Set aside. Heat olive oil, garlic and onion in large skillet over medium-low heat. Add cashews and cook until lightly toasted and onions are translucent. Add chicken and cook about 5 minutes or until almost done. Add sugar snap peas and cook until heated throughout. Add stir fry sauce and mix thoroughly. Remove from heat and add mandarin oranges. Serve immediately. May be served over rice.

Serves approx. 4
