Menu Plan Monday ~


Ok, I am officially in a rut. I have at least 30 tried and true recipes but hubby only likes about half of those. I want to please him but can't make only 15 meals a month. Well, I guess I could, but can we say...BORING!

So seriously, if you all have any delicious and simple recipes you whip together for your family, please share!

So for this week:

Monday ~ Tuna Mac & Cheese w/ peas

Tuesday ~ Chili w/ cornbread (no link for this but easy...ground beef, pinto beans, chili seasoning packet, tomato sauce, crockpot)

Wednesday ~ Easy Chicken Manicotti w/ green salad

Thursday ~ Sloppy Joes w/ corn

Friday ~ Turkey Loaf, Mashed Potatoes & Green Beans w/ bacon

Saturday ~ Grilled Chicken Breast & Drumsticks (kids) w/ Roasted Red Potatoes & green salad

Sunday ~ Ham & Cheese Calzones

I've got a great recipe.. Not sure if he'll like it or not but it is SUPER easy and makes a gigantic pot!

Stuffed Pepper Soup
-----------------------
2lbs ground beef (I usually use turkey)
3 large green bell peppers - diced
1 large onion - diced
1 29oz can of tomato sauce
1 29oz can of crushed tomatoes or diced tomatoes
1 tbsp salt
1 tbsp pepper
2 tbsp parsley
4 tbsp brown sugar (heaping)

brown the meat in a stock pot and drain if necessary. add the rest of the ingredients and cook for about an hour. this is a thick soup, almost like chili. VERY tasty! yummy with tortilla chips and cheese, too.

i thought this was a LITTLE spicey (i am a huge wuss when it comes to spice) so next time i will probably only do 1/2 tbsp of pepper.. but season it to your liking! it will look thin and runny at first but thickens up after it has been simmering for an hour!

Oops..I forgot to also add the 1 Cup of rice (white or brown) and 2 1/4 cups of water!

Oh how I can relate to the feeling of being in a meal rut. It is always nice to try new things and see how they work out for our family. Hopefully these will become happy additions.
BBQ Meatballs
2 egg whites
1/2 cup uncooked oatmeal
1/4 cup skim milk
1/2 tsp. dried parsley
1/4 cup onion, chopped very fine
1/2 tsp. oregano
1/2 tsp. sage
1/4 tsp. garlic powder
1/2 tsp. salt
1/8 tsp. cayenne pepper
1 pound lean ground beef

8 ounces tomato sauce
1/3 cup brown sugar
1/3 cup ketchup

Preheat the oven to 400.
By hand, mix the egg whites, oatmeal, milk, parsley, onions, oregano, sage, garlic, salt, pepper and the ground beef. If you have a cookie scoop you can use that to help you make the meatballs. If not, then roll the meat mixture into 24 balls. Place them -not touching each other- on a cookie sheet that has been lined with foil and sprayed with Pam. Bake for 10-15 min or until no longer pink inside.
While they are cooking, mix up the sauce. Combine the tomato sauce, brown sugar and the ketchup in a bowl. Stir well.
When the meatballs are done, pour the sauce over the tops. Bake 5 more minutes. Yields 4-6 servings.

Cola Chicken
1/2 cup onion-chopped chunky
1 Tbsp vegetable oil
1 pound Chicken breast, skinless, boneless, raw
12 fl oz Coca-Cola Coke-I use diet
1 cup ketchup
2 clove garlic clove
1/2 tsp table salt
1/4 tsp black pepper
1 Tbsp cornstarch

In a large skillet, saute onion in oil until tender. Add chicken; brown on all sides. Carefully add cola,(reserve enough to mix with the cornstarch) ketchup, garlic powder, salt and pepper. Cover and simmer for 25-30 minutes or until a meat thermometer inserted in the chicken reads 170. Remove the chicken and keep warm.
Combine the cornstarch and cold soda until smooth; gradually add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Return chicken to pan; heat through. I serve this with rice. Yield: 4-6 servings.
