Savvy Saver Recipe ~ Turkey Loaf & Turkey Burgers ~

I thought I'd share a couple of recipes I created using ground turkey.




Turkey Loaf


2 lbs. ground turkey (93/7 preferred)
1 packet onion soup mix
1 teaspoon Worcestershire sauce
1 cup BBQ sauce
1 egg (beaten)
1 cup bread crumbs (or oats or cooked rice)
Salt and pepper to taste

In large mixing bowl, mix all ingredients but only 3/4 cup BBQ sauce together thoroughly.

Form a loaf and place in baking dish. You may want to line with foil sprayed with cooking spray to save on clean up. Brush turkey loaf with remaining 1/4 cup BBQ sauce.

Bake at in oven at 350 for one hour and 15 minutes. Cooking time may vary.


I serve this with mashed potatoes and let the family choose between BBQ sauce and turkey gravy.




Turkey Burgers


2 lbs ground turkey (93/7 preferred)
1/4 cup onions (finely chopped)
1 egg (beaten)
1 cup bread crumbs
1 tsp Worcestershire sauce
salt and pepper to taste
hamburger buns
lettuce, tomato, sweet red onion (optional)

Sauce
1/4 cup mayo
1/4 cup BBQ sauce

Mix turkey, onion, egg, bread crumbs, Worcestershire and salt/pepper together in large mixing bowl. Form into patties and cook on a medium/high grill.*

*These are much tastier on an outdoor grill however you can also cook them in a non-stick skillet.

Meanwhile, mix mayo and BBQ sauce together to form a sauce for the burgers.

Serve on buns with all the fixin's.
I buy my ground turkey at Aldi. They have the Fit & Lean for $2.49/lb which is the least expensive I've seen the 93/7 ground turkey.

I've heard it said that you can substitute ground turkey for any recipe that calls for ground beef but I just haven't been able to bring myself to do that. I tried. I made a turkey lasagna once, and put it in spaghetti once. My hubby just lifted his eyebrows. He didn't say a word but those eyebrows said it all. I haven't tried any substitutions since.

Your turkey loaf looks yummy! My husband had the same reaction with turkey in spaghetti. But he did say that he did not want that again. Too funny!

I got this recipe through one of my weight watchers meetings.

Fiesta Tamale Pie
½ pound of ground turkey breast
½ cup chopped onion
½ cup chopped green pepper
1 clove garlic- minced
½ tsp cumin
1 - 15 oz can of black beans, drained and rinsed
1 - 4 oz can green chilies
1 cup low fat shredded cheddar
1 cup salsa
½ cup dry cornmeal
¼ cup flour
1 tsp baking powder
1 egg
½ cup skim milk
2 Tbsp splenda

Heat oven to 375F. Cook the turkey, onion, pepper and garlic until the turkey is cooked. Stir in the cumin, beans, chilies, salsa and half the cheese. Take off heat. Now mix the cornmeal, flour, baking powder, egg, milk and fake sugar together. Pour this into a sprayed 9 inch pie plate. Spoon the meat mix over the cornbread mixture. Bake 30-40 minutes till set and cornbread looks done. Remove from the oven and sprinkle with the remaining cheese. Let it set for 5 minutes before serving.
Just fyi… 4 serving = 7 points
I also add about a teaspoon of sour cream on top after it is served.
