Savvy Saver Recipe: Garden Veggie Saute ~


For those of you who grow a garden every year, I'm sure you have your favorite recipes to go with the harvest. However, if you're anything like me, you probably keep an eye out for new recipes to try.

This year, my friend Ada gave us several large yellow squash and zuchinni from her garden. I had no clue what to do with it all so I just started throwing stuff together and ended up with two different recipes that both hubby and kids loved. I haven't figured out names for them yet so we'll just call them Squash Recipe #1 and Squash Recipe #2. I'll share #1 with you this week and follow up next week with #2. 


This recipe originated from a similar recipe I saw over at A Thrifty Mom.

Ingredients:
1 cup onion (chopped)
1/2 package of bacon but into bite size pieces
1 garlic clove (I use the minced garlic that comes in the jar. One teaspoon = 1 clove)
1 cups yellow squash (sliced and chopped into bite size pieces)
1 cup zuchinni (sliced and chopped into bite size pieces)
1 cup mushrooms (sliced)
thyme, basil, oregano, sage, salt and pepper to taste
2 cups chicken or turkey (cooked)
Brown Rice (4 servings prepared)

Toss onion, bacon and garlic together in large skillet and cook over medium-high heat. Continue to saute until onion is translucent and bacon is cooked but not crispy.

Turn heat down to medium. Add vegetables, spices and salt/pepper to the skillet and sautee for about five minutes. Then add meat and continue cooking until hot.

Serve over rice.


The bacon flavor and spices mix together just right in this dish and give it a savory flavor. It's a great way to use up leftover turkey during the holidays as well.

Now I just need a name for it. Have any ideas?

I'm not good with names..Maybe bacon squash stir fry. This looks so good. I bet it smelled wonderful cooking. But then again, anything with bacon and onion usually gets to me.

Sounds really good, Amanda! We are missing our squash and zucchini. The little boy that was going to water it while we were on vacation this summer waited all week and then watered the tar out of it on the day we came home. It didn't make it!
