Easter Dinner Savings

As we approach one of the most important celebrations of the Christian faith, it is my prayer that Christ is alive and active in each one of your lives. I hope you will take some time to be quiet with your family and friends and reflect on the amazing and perfect gift our Father has given us through Christ Jesus.

With Easter Sunday only a week and a half away, I thought I'd suggest a few easy ideas for dinner. You can put together an inexpensive and easy, yet elegant meal by taking advantage of some of the following deals.


Ham -
Homeland - Hormel Cure 81 Spiral Sliced Ham $1.79/lb.
Walmart - Spiral Sliced Half Ham $1.58/lb.

Fresh Pineapple -Walmart - Fresh Whole Pineapple $2.50 each

Asparagus with Hollandaise (see end of post for a simple Hollandaise recipe)
Walmart - Fresh Asparagus $1.50/lb.

Bread -Homeland - Rhodes Warm n Serve Frozen Rolls $2.39 - $1 Q (d) = $0.39

Throw in some mashed potatoes. I personally love the Ore~Ida Steam & Mash but without coupons they can be kind of expensive so homemade would be the least expensive. Not to mention, I've never heard anyone complain about homemade mashed potatoes. For extra flavor, wrap a garlic clove with a bit of olive oil tightly in aluminum foil and bake in the oven at 400 til it gets mushy. Then squeeze out the paste into your potatoes along with your milk and butter when you mash them. YUM!

Now that dinner is taken care of, let's move on to DESSERT!

VOILA! Inexpensive, delicious and best of all...EASY Easter offerings that ensure you're able to spend your time with others rather than being trapped in the kitchen.

Here's the recipe I promised:

Hollandaise
1/2 cup butter
3 large egg yolks
1 tablespoon plus 1 teaspoon of lemon juice
1/8 teaspoon salt
dash cayenne pepper or hot pepper sauce
2 tablespoons hot water
finely chopped fresh parsley, if desired

Heat butter in a heavy saucepan until hot and foamy, but not browned. In a small bowl, whisk or beat egg yolks with lemon juice, salt, and cayenne pepper or hot sauce. Gradually beat in butter, then water. Return mixture to saucepan and beat over very low heat until mixture is slightly thickened. Serve immediately or let stand over warm water for up to 30 minutes. If desired, sprinkle with chopped fresh parsley before serving. Makes about 2/3 cup of hollandaise sauce.
